Lunch/Dinner - Veg Starters - Egg Plant Fry

Veg Egg Plant Fry

  1. Peel and cut the egg plant into slices.
  2. Add parmasan and bread crumbs together into a shallow bowl and mix well. Crack eggs into a shallow bowl and beat them together.
  3. Dip egg plant slice into the egg, then into crumbs holding into completely. Shake off excess crumbs and place them into wire rack to air dry completely. Continue to dip remaining slices.
  4. Heat oil in a pan over medium high heat. Add slices into the pan in single layer and fry them for 2-3 mins. Turn the slices and fry them additional 2-3 mins into the golden brown. You need to cook other slices in batches adding more oil if neccessary. Drian them on paper tower and season them with salt to taste.
Tips :
  1. Thin slices will be crispier and cook faster.
