Brown Rice | 1 cup, soaked for 15 to 20 minutes |
Onion | 2 small or 1 medium, sliced |
Carrot | 1, chopped |
Beans | 5 to 6, chopped |
Capsicum | 1, small, chopped |
Broccoli | 1/2 cup, chopped |
Green Peas | 1/4 cup, shelled |
Green Chillies | 2, slit |
Cinnamon | 1/4 inch piece |
Green Cardamoms | 2 |
Cloves | 2 |
Coriander Leaves | handful, chopped |
Cumin Seeds | 1/4 tsp |
Garlic | 1/2 tsp, minced |
Salt | as per taste |
Oil | as required |

Method
- Heat 1 tsp oil in a heavy-bottomed pan. Add the cinnamon, cumin seeds, cardamoms and cloves.
- Saute well for 45 seconds. Add the onions and garlic. Stir-fry until onions turn brown.
- Now add the rice, vegetables, green chillies and salt. Pour 3 to 4 cups of water. Mix well.
- Simmer over low flame until most of the water has evaporated and rice is cooked and vegetables are tender.
- Remove and transfer to a serving bowl. Garnish with coriander leaves.
