Ingredients

Brown Rice1 cup, soaked for 15 to 20 minutes
Onion2 small or 1 medium, sliced
Carrot1, chopped
Beans5 to 6, chopped
Capsicum1, small, chopped
Broccoli1/2 cup, chopped
Green Peas1/4 cup, shelled
Green Chillies2, slit
Cinnamon1/4 inch piece
Green Cardamoms2
Cloves2
Coriander Leaveshandful, chopped
Cumin Seeds1/4 tsp
Garlic1/2 tsp, minced
Saltas per taste
Oilas required

Method


  • Heat 1 tsp oil in a heavy-bottomed pan. Add the cinnamon, cumin seeds, cardamoms and cloves.
  • Saute well for 45 seconds. Add the onions and garlic. Stir-fry until onions turn brown.
  • Now add the rice, vegetables, green chillies and salt. Pour 3 to 4 cups of water. Mix well.
  • Simmer over low flame until most of the water has evaporated and rice is cooked and vegetables are tender.
  • Remove and transfer to a serving bowl. Garnish with coriander leaves.

Recipe Tips


  • A healthy and delicious pulao with brown rice and vegetables. Ideal for lunch or dinner.
