First, make the tart dough well in advance. Now, preheat oven to 180 degrees. Roll the short crust on a fine dusted board and then return it to the refrigerator for 10 minutes.
Take it and roll it until the diameter of dough is about 12 inches. Drape it over rolling pin and move it into a pan. Press it firmly into bottom and sides, then prick all over with a fork or a tooth pick to avoid shrinking and unnecessary rise of the tart.
Line it with foil and weigh it with uncooked rice or other weights that will sit flat on the surface. Bake it for 15 minutes, or until the shell is still quite pale.
Remove from the oven, reduce heat to 350 degrees and carefully remove weights and foil. Combine sugar, cinnamon powder and corn flour in a bowl. Toss with about one cup of grapes first, crushing some of grapes with a fork.
Pile into the tart crust, then top with remaining grapes. Bake for about 30 minutes or until fruit mixture is bubbly. Serve warm or at room temperature, dusted with confectioners sugar, or topped with ice cream.
