Cutlet - Ridgegourd Cutlet

  1. Cut Ridge gourd-Gutti Beerakaya into very tiny pieces, add little salt and leave it for 15 mins. Squeeze the water completely from the ridge gourd pieces.
  2. Mix all other ingredients to this and combine well without adding any water. Ensure that the paste is of the correct consistency to facilitate the making of the vadas.
  3. Take small amount of lime-sized balls and flatten slightly.Make them like vadas on a greased oil plastic sheet.
  4. Deep fry in oil until they become crisp and light golden color. Drain and serve hot with chutney.

Breakfast - Vada - Ragi Palak Vada

  1. Clean and soak the chana dal in water for an hour. Once soaked, drain completely and pulse the dal in a mixer or food processor into a coarse paste. Meanwhile, wash spinach and chop them finely.
  2. Add the rest of the ingredients and mix well.
  3. Shape into lime-sized balls and flatten slightly.
  4. Deep fry in oil until they become crisp. Drain and serve hot with chutney.

  1. Put moongdal 3 whistles in a cooker. Once its cools down, grind it properly to form a smooth paste.
  2. Roast the oats for 2 mins and mix this with the moongdal paste. Combine it with all other ingredients(except oil). Add required water till it comes to vada consistency batter. Check the salt seasoning.
  3. Heat a pan, add oil. When the oil is hot enough, take a small ball of vada batter and make small patti and then gently add the vadas to the pan and keep the flame in medium and fry the vadas.
  4. Gently turn the vadas to other side and fry them evenly. Remove the fried vadas and place it in paper towel to drain excess oil. Repeat for rest of vadas.
  1. You can even shallow fry the vadas as against the normal procedure of deep frying.

  1. Soak urad dal in water for 1 hr. Cut the tomatoes and remove the seads. Mix together and coarse paste in a mixer-grinder.
  2. In a wok, heat oil . Meanwhile mix all other ingredients to the batter and combine well. Ensure that the paste is of the correct consistency to facilitate the making of the vadas.
  3. Make small round balls out of that mixture and flatten it using your hands. Slowly drp them into oil.

  1. Add tempering seasons in a pan. Add onions,green chillies and saute them well.
  2. Add methi leaves, mashed potatoes,garam masala,turmeric powder and coriander powder to the mixture. Mix well till the methi leaves becomes fry.
  3. Add Oats to the mixture and saute them for 5 mins. Keep the mixture aside to become cool.
  4. Add oil to the skillet to heat. Prepare vada size cutlets and keep them aside.
  5. In a bowl mix gram flour and corn flour together by adding little water. Batter should be like dosa batter. Now dip the cutlets in the batter and drop them slowly in the hot oil.
  6. Fry the cutlets till they turn light brown in color. Remove the fried cutlets and place it in paper towel to drain excess oil. Repeat for rest of cutlets.

  1. Put cabbage in a pressure cooker by adding 1 Tsp salt and 1/4 cup water. Whistle for 3 and drain the water.
  2. Mean while add remaining items in a bowl. Mix them with cabbage well and adjust the salt if needed.
  3. Don't add water at all. If the batter is loose adjust it by adding rice or gram flour.
  4. Heat a pan, add oil. When the oil is hot enough, take a small ball of vada batter and make small patti and then gently add the vadas to the pan and keep the flame in medium and fry the vadas. Gently turn the vadas to other side and fry them evenly. Remove the fried vadas and place it in paper towel to drain excess oil. Repeat for rest of vadas.

  1. Mash the boiled vegetables nicely like soft creamy. Mix all other ingredients to this and bind them completely.
  2. Add 1 Tbsp of maida and corn flour in water and mix without lumps.
  3. Then take a polythene cover, drizzle a drop of oil and grease well. Pinch a small lemon sized ball and pat it on the polythene cover till very medium size thickness.
  4. Dip balls into the liquid, then into crumbs holding into completely. Shake off excess crumbs and place them into wire rack to air dry completely. Continue to dip remaining balls.
  5. Heat oil in a pan over medium high heat. Add balls into the pan in single layer and fry them for 2-3 mins. Turn the balls and fry them additional 2-3 mins into the golden brown. You need to cook other balls in batches adding more oil if neccessary. Drian them on paper tower and season them with salt to taste.
