Breakfast - Vada - Moongdal Oats Vada

- Put moongdal 3 whistles in a cooker. Once its cools down, grind it properly to form a smooth paste.
- Roast the oats for 2 mins and mix this with the moongdal paste. Combine it with all other ingredients(except oil). Add required water till it comes to vada consistency batter. Check the salt seasoning.
- Heat a pan, add oil. When the oil is hot enough, take a small ball of vada batter and make small patti and then gently add the vadas to the pan and keep the flame in medium and fry the vadas.
- Gently turn the vadas to other side and fry them evenly. Remove the fried vadas and place it in paper towel to drain excess oil. Repeat for rest of vadas.
- You can even shallow fry the vadas as against the normal procedure of deep frying.

- Soak urad dal in water for 1 hr. Cut the tomatoes and remove the seads. Mix together and coarse paste in a mixer-grinder.
- In a wok, heat oil . Meanwhile mix all other ingredients to the batter and combine well. Ensure that the paste is of the correct consistency to facilitate the making of the vadas.
- Make small round balls out of that mixture and flatten it using your hands. Slowly drp them into oil.

Breakfast - Vada - Green Pea Dahi Vada

- Beat the curds well, and add other curd ingredients and mix well. Prepare Tempering and add this to the dahi. Keep aside for later use.
- Wash and soak green peas and urad dal for 6-8 hours. Coarsely grind the soaked green peas in a mixer,without adding water. In the same way grind the urad dal like vada batter.
- Transfer this to a bowl, add all other vada ingredients(except milk).Mix well with a spoon.
- Heat oil for deep frying. Keep on medium flame. mear some oil on your palm, take a lemon size ball of the mixture,and press gently with your other palm to a round shape.
- Now put it gently into the hot oil and deep fry until golden brown. Repeat and same for 3-4 vadas per batch.
- Then take 1 litre water, add salt,,milk and heat it till it becomes warm. Put all the Vadas into the water and cover it. After soaking them for half an hour, take out the Vadas from the water. Now sqeeze out the excess water from the Vadas by pressing with your hand. Most of the oil will get squeezed out too. Take out vadas and gently put them into the curds mixture.

- Beat the curds well, and add other curd ingredients and mix well.
- Prepare Tempering and add this to the dahi.
- Add corn and swee corn together and blend to a coarsed paste. To this add vada ingredients and mix well.
- Grease water on the banana leaf and flatten the paste and make a round shape with the help of your fingers.
- Take out the round Vada and put it in the frying pan. Fry till it becomes brown. Take out the fried Vada and keep it on a plate (You can fry 3 to 4 Dahi Vadas at a time ).
- Make all Vadas similarly and keep them aside.
- You can even use a wet cloth instead of banana leaf.

- Wash and soak poha for 10-15 minutes or until it is soft.After that drain the excess water from aval and lightly mash it with your hands or using a spatula.
- Add remaining ingredients except oil (which is for frying) to this and mix the above and form vada out of it. Make sure you don’t add much water into it.
- Make small round balls out of that mixture and flatten it using your hands (as shown in pic).
- In a wok, heat oil and deep fry. Deep fry those vadas till it becomes golden brown and crisp.
- Deep fry it in a non-stick pan or cast iron pan so that way it won’t stick into the bottom of the pan. Don’t use stainless steel for frying.
- While making vada, if the mixture is too thick, dip fingers into a bowl of water and try to shape.
- If you feel the mixture is watery you can adjust it with adding some besan or rice flour.

- Soak moong dal and ural dal(with skin) washed, soaked for 3 hours and ground to a fine paste. Wash palak and steam or boil it. Do a fine paste out of it.
- Add remaining ingredients except oil (which is for frying) to this and mix the above and form vada out of it. Make sure you don’t add much water into it.
- Make small round balls out of that mixture and flatten it using your hands. In a wok, heat oil and deep fry. Deep fry those vadas till it becomes golden brown and crisp.
- Make all Vadas similarly and keep them aside.
- Take 1 litre water, add salt and pinch of asafoetida, and heat it till it becomes warm. Put all the Vadas into the water and cover it. After soaking them for 5 mins , take out the Vadas from the water. Now sqeeze out the excess water from the Vadas by pressing with your hand. Most of the oil will get squeezed out too.
- Arrange the Vadas in a tray or a shallow bowl. Pour the curd mixture till it covers all the Vadas. Garnish them as you like.

Breakfast - Vada - Moongdal Dahi Vada

- Soak moong dal(with skin) washed, soaked for 3 hours and ground to a fine paste adding very little water. Combine the ground moong dal paste with grated ginger, chopped green chillis and salt.
- Pre-heat oil in a deep frying vessel, place a plastic sheet in your palm and place a little batter and shape into a vada (like a doughnut) or like a big lemon sized ball and drop slowly into the hot oil. Deep fry on medium heat for sometime and then fry on high heat till golden brown. Finish making vadas with the rest of the remaining batter. Keep them aside.
- Beat curds well till frothy (there shouldn’t be any lumps). In a pan add 1 Tbsp of oil and crackle the "Tamper" ingredients. Add this to curds and mix well.
- Place the vadas in a serving bowl (as shown in the picture) and pour the curd mixture evenly all over the vadas, covering them completely.
- Chill the vadas for sometime before serving. At the time of serving, take 2-3 vadas and place them in a serving plate and sprinkle some chaat powder.
