  1. Knead the dough with fingers very well before adding milk. After adding milk it should be very hard or too soft too. So,be careful while adding milk.
  2. Deep frying is the most important in making jamuns.Keep flame always in medium..If the oil is too hot,off the flame for a minute then add dough balls again on flame after a half minute.Sugar syrup is not to be very thin....And it should be warm also. Finally the most important tip is soak for some time.

  1. Mix all "batter" ingredients in a bowl. Make this batter so that there are no lumps. Add required water to make it soft like dosa dough. Batter should be in medium consistency. Let it rest for 3-4 hrs.
  2. Add all vegetables to this batter. Add water if required to get general dosa consistency.
  3. Pre-heat an iron tawa on high for a minute. Pour a ladle full of dosa batter from the outward base of the tawa in a circular motion. Fill the gap in the middle with dosa batter. Drizzle 1-2 tsps of oil along the edge of the dosa and the gaps in the middle.
  4. Increase heat to medium flame and let the dosa cook for around 2 to 3 mts. If you want a slightly softer dosa, remove the dosa at this point. For a crisper dosa, increase flame to high and let the dosa roast for a half a minute or so.
Tips :
  1. You can add melted butter on top instead of oil.

  1. Wash all the vegetables, peel the skin and cut them into pieces.Wash the rice and soak it for 30 minutes. Roast the oats for 5 mins or till they turn light brown color.
  2. Heat the oil in a bowl add all vegetables and garam masala. Cook this for 5 mons or till the vegetables becomes soft.
  3. Add 2 cups of water to it and then cover with lid until it gets boiled. Add soaked rice and mix it well by adding salt.
  4. When the rice is half boiled add oats and cook for 5 more mins or till the oats gets cooked.
  5. Garnish with curry leaves.
Tips :
  1. If the rice you are using is old, you will have to add a little more water than the prescribed ratio of 2:1.
  2. Add a tsp of lemon juice to rice while boiling, to make it white and fluffy. It will also help to bring out the rice flavorful.
  3. When cooking rice for biryani / pulao, wash and soak the rice for twenty minutes. Then drain the rice and leave to dry (you can spread the rice in a plate or on a kitchen towel) for about thirty minutes. This will help to remove the excess starch from the rice, and every grain will be separate.
  4. Do not stir the rice when cooking, as the rice grains will get crushed releasing starch into the water making the rice sticky.
