Sweets - Halwa - Beetroot Halwa

Beetroot Halwa

  1. Peel and then use a box grater to shred the beetroot.Squeeze the water out completely. In a skillet heat 1 Tbsp of ghee. Roast the dry fruits until brown. Remove them and set aside.
  2. In the same pan, roast the grated beetroot for 3-5 mins in medium flame.
  3. After add milk,sugar and mix them nicely. Cook this for 10 mins untill the mixture becomes think in mass. Add remaining ghee and cook for 3 more in low flame on continuous stir.
  4. Finally add the roasted nuts and elachi powder and mix well.
  1. Adding kova to the halwa gives more taste.

  1. Soak the dry dates overnight. Drain the water and prepare paste with that. Peel and then use a box grater to shred the beetroot.Squeeze the water out completely.
  2. Roast the dry nuts in ghee in 1 Tbsp of ghee as you do for general sweets. Keep them aside.
  3. In the same pan add the grated beetroot and roast them in ghee for 5 mins.
  4. Add the dates paste and ghee to this and mix well. Cook this for a min.
  5. Finally add milk,kova,condenced milk and sugar to this. Cook this till the halwa becomes thick in mass. Finally add the dry nuts and elachi powder and mix them.

  1. Peel of the ashgourd and grate it in small hole side.
  2. Add ghee to a pan and roast the nuts. To the same pan add the ashgourd and mix till the water evoporates.
  3. Add the milk to this and stir nicely till it combines to the halwa.
  4. Now add kova and sugar and mix well till you get halwa consistency. If the halwa is sticking to the pand add little ghee and mix till the halwa leaves the bottom of the pan.
  5. Add the dry nuts and switch off the flame.

  1. In a pan add peanuts dry roast peanuts,peel the skin and blend into a smooth powder. Remove the date seeds and blend into fine powder.
  2. Melt some ghee in the same pan,add curry leaves and fry till crisp,blend into a smooth powder.
  3. Prepare sugar syrup in a pan till it comes to light consisitency by adding 1 cup of water
  4. To that add curry leaves powder and then peanuts powder and mix well without any lumps.
  5. Now add dates powder and mix well. Cook for few minutes till done,sprinkle some cardamom powder,fried cashew nuts and mix well,serve hot.

  1. In a skillet heat the ghee. Roast the cashews until brown. Remove the cashews and set aside. In the same pan, roast the greated chayote for 3-5 mins in medium flame.
  2. In the same pan heat 1 tablespoon of ghee and add carrote to fry for a 5 mins minutes.
  3. Add mango to this and let it cook for 5 minutes in medium flame or until most of the mango leaves rawness.
  4. Now add kova and sugar and cook till the halwa will turn little more dark. Add ghee little by little and keep stirring continously in medium flame. In another 10 -15 minutes the halwa will thicken and comes of the sides of the pan. If you touch the halwa it will be little sticky.Add cardomom powder and mix well and switch off the flame. Garnish with fried cashews.
  1. Halwa can be refrigerated for up to one week and kept in the freezer for up to two months.

  1. Peel and halve the chayote to remove the seed and then use a box grater to shred the fruit.Squeeze the water out completely.
  2. In a skillet heat the ghee. Roast the cashews until brown. Remove the cashews and set aside. In the same pan, roast the greated chayote for 3-5 mins in medium flame.
  3. Now slowly add the kova,sugar and milk to the chayote. Cook this for 10 mins untill the mixture becomes think in mass. Add remaining ghee and cook for 3 more in low flame on continuous stir. Finally add cardomom Powder and cashews and mix well.

  1. In a skillet heat the ghee. Roast the cashews until brown. Remove the cashews and set aside. In the same pan, roast the semolina for 2-3 mins in low flame. It will start being aromatic. The purpose for doing this slow roasting is dual. One for avoiding lumps while adding milk later and also to get rid of the rawness of the semolina. You can also keep this rava aside and do the rest when ever you want.
  2. Now slowly add the milk and to the semolina. making sure to keep stirring the pan,so that the semolina does not form into lumps. The semolina should be completely cooked and you can find it out by touching it. It will be soft, will not stick to the sides and will come together as one mass. You can dissolve the saffron in few drops of hot milk and add it to honey. At this point add the honey. Make sure to add honey only after the semolina is well cooked. Sprinkle it over evenly on the surface.
  3. Remove from pan and transfer it to a greased ghee plate. Cut them into slices as you like and garnis with cashews if desired.
  1. You can substitute honey with the sugar. The amount of sugar will depend on your taste. If you like it mild, start with 1/2 cup sugar.
  2. For different tastes/variety you can add few drops of essence at this stage like pineapple, mango, rose, vanilla etc.
