Sweets - Halwa - Carrot Mango Halwa

Carrot Mango Halwa

Raw Mango,grated1/2 Cup
Plain Kova1 Cup

  1. In a skillet heat the ghee. Roast the cashews until brown. Remove the cashews and set aside. In the same pan, roast the greated chayote for 3-5 mins in medium flame.
  2. In the same pan heat 1 tablespoon of ghee and add carrote to fry for a 5 mins minutes.
  3. Add mango to this and let it cook for 5 minutes in medium flame or until most of the mango leaves rawness.
  4. Now add kova and sugar and cook till the halwa will turn little more dark. Add ghee little by little and keep stirring continously in medium flame. In another 10 -15 minutes the halwa will thicken and comes of the sides of the pan. If you touch the halwa it will be little sticky.Add cardomom powder and mix well and switch off the flame. Garnish with fried cashews.
  1. Halwa can be refrigerated for up to one week and kept in the freezer for up to two months.

Mango Saseme Chutney

  1. Place a skillet with Saseme seeds in it and roast with 1 tsp oil for about 5 mins on medium heat.
  2. Add green chillies to it and fry for 5 more mins.
  3. First coarsely grind saseme seeds,green chillis,salt and turmeric. To this add mango pieces and grind to a fine paste.
  4. Prepare "Temper" with tempering" ingredients and add it to the chutney.

Raw Mango Spring Onion Pickle

Spring Onions1 Cup

Turmeric Powder1/2 tsp

Mustered seeds,Roasted 1/2 tsp
Fenugreek Seeds,Roasted 1/2 tsp

  1. Add salt to the cut mango pieces and set aside for 20-30 mins. Combine mustard seeds and fenugreek seeds together and powder it together. Tip in the salted mangoes and add chiili powder, turmeric powder, cloves. Combine the mixture well.
  2. Now add Spring onions to this and mix well. Add oil and combine till the mixture evenly moistured.
Tips :
  1. Transfer to a dry glass jar. Store it in dry place and use up for a year.
  2. Rice with a combination of pickle is delicious.

Raw Mango Ginger Pickle

Garlic Paste1/4 Cup

Red Chilli Powder1/2 Cup
Turmeric Powder1/2 tsp

  1. Add salt to the cut mango pieces and set aside for 2 mins. Combine chiili powder, turmeric powder by adding 1 cup of oil.
  2. Add 1 cup of oil and mix well. Let it rest for 3 days in dry area. Mean while wash ginger and sun dry it for a day.
  3. Make a fine paste with ginger and garlic. Add this paste to the above mixture. Add the remaining oil to this and combine well.
Tips :
