CommonMeal - Chutney - Mango Amarnath Pickle

Mango Amarnath Pickle

  1. Wash leaves and wipe with a clean dry cloth. Heat oil in a deep frying pan till smoking point add mustard seeds and let them splutter then add broken red chilies. Add grated mango mixture mix well and cover with the lid. Cook for 2 mins or till the rawness goes off.
  2. Add the leaves to the mango mixture and fry them till the leaves is nicely fried. Close the lid and cook for 5 more mins.
  3. Add all other spices to this and cook for 2 more mins.
  1. Very easy to make and stay for a month. This is an instent pickle which you can use from the next day. You can serve this pickle with any thing like Idli, Dosa, Pongal, Curd rice,Rice .

Mango Saseme Chutney

  1. Place a skillet with Saseme seeds in it and roast with 1 tsp oil for about 5 mins on medium heat.
  2. Add green chillies to it and fry for 5 more mins.
  3. First coarsely grind saseme seeds,green chillis,salt and turmeric. To this add mango pieces and grind to a fine paste.
  4. Prepare "Temper" with tempering" ingredients and add it to the chutney.
Tips :
  1. Rice with a combination of chutney is delicious.

Raw Mango Spring Onion Pickle

Raw Mango,with skin,cut into cubes 2 Cups
Spring Onions1 Cup

Turmeric Powder1/2 tsp

Mustered seeds,Roasted 1/2 tsp
Fenugreek Seeds,Roasted 1/2 tsp

  1. Add salt to the cut mango pieces and set aside for 20-30 mins. Combine mustard seeds and fenugreek seeds together and powder it together. Tip in the salted mangoes and add chiili powder, turmeric powder, cloves. Combine the mixture well.
  2. Now add Spring onions to this and mix well. Add oil and combine till the mixture evenly moistured.
Tips :
  1. Transfer to a dry glass jar. Store it in dry place and use up for a year.
  2. Rice with a combination of pickle is delicious.

Raw Mango Ginger Pickle

Garlic Paste1/4 Cup

Red Chilli Powder1/2 Cup
Turmeric Powder1/2 tsp
Oil2 Cups

  1. Add salt to the cut mango pieces and set aside for 2 mins. Combine chiili powder, turmeric powder by adding 1 cup of oil.
  2. Add 1 cup of oil and mix well. Let it rest for 3 days in dry area. Mean while wash ginger and sun dry it for a day.
  3. Make a fine paste with ginger and garlic. Add this paste to the above mixture. Add the remaining oil to this and combine well.
Tips :
  1. Transfer to a dry glass jar. Store it in dry place and use up for a year.
