Sweets - Kheer - Macaroni Kheer

Macaroni Kheer

  1. In a saucepan, heat the ghee. Add the chopped nuts along with raisins. Set aside when raisins get plump and nuts turn reddish brown. In the same pan, roast the macaroni for 3-5 minutes in low heat.
  2. Boil 3 cups of water in a pan and add the macaroni, boil for 5 mins.
  3. To the ghee pan, add the milk. Increase the heat to med-high and let it come to a boil. Give it an occasional stir so that the milk does not stick to the bottom. Non stick pan works great for this. Also take care not to let the milk burn. Even a little burn spoils the milk. Add sugar and give it a stir.
  4. Reduce the heat to medium and cook until the milk has reduced in half. Add milk maid and macaroni to this. Keep stirring often. You know its done when the milk has reduced and also the macaroni has cooked and is soft (not mushy). This process takes approximately 5 minutes. Add rest of the ingredients cardamom and half of the roasted nuts. Give it a stir until combined and serve garnished with the remaining nuts.
  1. You can serve it hot or cold. The pudding thickens with time - you can rectify it by adding more warm milk to it.

  1. Pour the milk and bring it to boil.
  2. In a separate pan add 1 cup of water. When water boils add vermicelli.
  3. Add soaked sago to the mixture and stir it till the rawness goes off.
  4. Add moong dal paste and cook for 2 more mins with out lumps.
  5. Add sugar and stirring constantly bring to boil.
  6. Finally switch off the flame and add cardomom,ghee,roasted nuts and milk one by one by mixing throughly.

  1. Pour the milk, sugar and stirring constantly bring to boil.
  2. Peel of the ridge gourd and cut them into small pieces. Boil the ridge gourd in a cup of water for 10 mins or till they become soft.
  3. Heat the 2 tsp of ghee in a heavy bottomed non-stick pan over medium heat and add rava and fry till golden brown, stirring constantly.
  4. Add rava and ridge gourd to the milk and cook until the milk is slightly thickened.
  5. Add food color,ghee,roasted nuts to the milk and cool to room temperature.

  1. Wash and boil dates in hot water for at least for 10 mins. Remove the seeds and chop them into pieces.
  2. Pour the milk and sugar into an open vessel. Heat it for about 10-15 minutes until the milk comes to a boil. Stirring it with a spoon helps to retain nutrients and not boil them off, but is not necessary.Now add condenced milk and keep stirring until mixture becomes little thick.
  3. Add apricots and cook for 5 more mins by continuously stirring them. I add cardamom as a whole,crushed a little.I feel this adds more flavour to the finished dish.Yo can remove the peels of cardamom before serving.Or if you prefer,add crushed cardamom seeds alone.
  4. Ghee Roast the dry nuts and mix into the mixture.
Tips :
  1. Adding the nuts while the semiya is cooking makes the nuts soft and delicious.However,if you like some crunch in the nuts,add half in the payasam while cooking and the other half as garnish.

  1. Dry roast moong dhal until nice aroma rises, Keep aside. In a pan dry roast cashews and coconut one by one until golden brown.
  2. Wash and soak dates in hot water for at least for 2 hours. Blend ot to a fine paste by adding little hot water. Dry roast the nuts and coocnut.
  3. Pressure cook moong dhal, rice,milk(1 Cup) with water(1 Cup) for 3 whistles in medium flame, mush it up a laddle once and set aside. Mix them well before cook.
  4. Add remaining milk and allow it to boil. Combine well,cardamom powder and roasted coconut and cashews and give a quick stir. Once its semi thick switch off the flame. Add dates paste and honey. Combine well till the paste is coated all over the rice.
Tips :
  1. Adding saffron is purely optional but will give a richer taste.
  2. Adding more milk and cooking the pongal in milk gives a yummy taste.
