- Soak Rice and Urad dal in a bowl for atleast 4 hrs or over night. In a separate bowl soak chana dal. Grind into a fine batter as you do for dosa.
- Cook chanadal in 2 cup of water for 20 mins.
- Add pumpkin pieces to this and cook for 5 mins or till the pieces becomes soft. Now add jaggary and dissolve it. When the jaggary becomes like syrup consistency switch off the flame.
- Immediately put it in blender and prepare a fine paste or poorname out of it.
- Now heat oil in a kadai. Mean while prepare balls with the poornam.
- Once the oil is hot enough dip the poornam into the batter and drop them into oil. When it becomes gloden brown in color, drain the oil and transfer it in a plate. Fry the rest of the gaare in the same way.

- Wash urad dal several times till the water runs clear. be quick do not let the dal soak up. Drain the water and spread it on a clean, thick cotton cloth and pat dry or rub the cloth against the dal. Immediately heat a heavy bottom pan and roast this dal on high for 4 to 5 mins and then on a medium flame till the dal turns crunchy. keep stirring to prevent burning. if burnt the ladoos do not taste good. once cool, powder dal in the mixer to as smooth as possible.
- In the same pan dry roast few nuts and blend them into fine powder.
- Add jaggery, cardamom powder, urad dal powder and run the mixer till all blends well.
- Add ghee to the pan and roast the remaining nuts. Roast them till they turn to light golden color.
- Pour the ghee over the powder, mix well and make ladoos immediately. Do not pour the ghee at once; add little by little as and when needed and warm up if it is not warm as it helps to cut down the ghee.
- if you desire to make this in large quantity, you can mill the roasted dal to flour and store it in an air tight conatiner, When needed just add sugar and ghee and make the balls.
- if you are conscious to use ghee, you can make balls using milk. But must be consumed immediately.
- This can be used to prepare a cereal for babies above 1 year old. soak the flour in water for atleast 1 hr and cook till fully done.add jaggery and ghee at the end.

- Remove the seeds from dates and cut them into chunks. Belnd them into a fine powder, sieve it if necessary.
- Roast the urad dal till they become light golden color. In the same way roast the wheat bran till they leave raw smell. Powder them separately and sieve them.
- Now mix all powder ingredients together. Now slowly add honey little by little and mix the powder till it gets the moisture to do laddus.
- Take enough in your hand to form a golf ball-sized lump. Roll between your palms till smooth. Lay on a greased plate to cool. Repeat till all the mixture is used up.
- They can be stored for 2-3 months fresh in freezer and 15-20 days outside.
- Here I have used whole dal as it is, instead of broken urad dal.
