Drinks - Ice Tea

Ice Tea

  1. Make a brew of tea using tea powder and 2 cups of water. Boil it for 2 mins and add ginger to it. Boil it for 3 more mins. Let it rest for 3 mins to cool.
  2. In a large jug place sugar,lime juice,honey and 1 cup of cold (filtered) water. Stir until the sugar is dissolved. Filter your brewed tea into the sugar/water mixture and stir. Adding the hot tea to the cold water helps prevent the finished drink from becoming cloudy. Allow to cool further then serve in glasses over ice. Sprigs of mint make an attractive garnish.
Tips :
  1. Allow the tea to steep for no more than 5 minutes, otherwise it may become bitter.
  2. Filtered water will give a far better taste. You can use either traditional black tea or lighter-tasting green tea.
  3. Iced tea will keep overnight in the fridge, but tea has a delicate flavour and for the best iced tea experience it should be drunk the same day.
  4. For a lemon tea tangy alternative, make a jug of plain iced tea as above, but add 60 ml of lemon juice to the cold water before you add the hot tea.

Drinks - Raw Mango Juice

  1. Peel of the skin of mangoes and cut the pulp into slices. Heat water in a sauce pan and keep a bowl in it and add mango slices and mint leaves. Close the lid and allow the water to boil for 5 minutes.
  2. In a pan add 1 Cup of water and sugar, put in flame for syrup. It should be light consistency(Letha paakam).
  3. Grind the the mangoes,mint leaves by adding cumin seed powder and salt.
  4. Add the puree to the syrup and cook for 5 mins. Filter the puree and let it rest to become cool. To this add Ice cubes and mix well.
Tips :
  1. It can be stored for 2 days in fridge.
