Ashgourd Tomato Chutney

  1. Heat a pan and add oil to it. When oil is hot add cumin seeds. Fry well till the seeds splutter. Add green chillies and garlic cloves.
  2. Add grated ashgourd and turmeric powder to it. Fry them for 3-5 mins or till rawness goes off from the ashgourd.
  3. Add tomatoes,mix well and close the lid. Cook this till the tomatoes becomes tender.
  4. Once it becomes cool add tamarind paste,salt and blend it to fine paste. Finally add Tempering to the chutney.
  1. Serve this chutney with Idli,Dosa/ Utappam,Upma,Roti etc…

Ashgourd Sweet Roti

  1. Soak urad dals together for an hour. Grind it just like you do for general vada batter.
  2. Add all other ingredients to the batter and mix well.
  3. Directly spread the dough into a rotti on the tava. Because the dough sticks to the fingers while spreading, you have to dip your fingers in water or oil often and then continue to spread the dough. Lightly coat with ghee on top of it.
  4. Flip the rotti with a spatula, if its surface color has changed. Reduce the flame, but make sure it is between medium and high. Flip the rotti again after a few minutes. Pour 1/4 teaspoon of ghee on the rotti.Cook till a few golden brown spots appear on both sides.
