Ingredients

Rice Vermicelli or Plain Noodles110 gms
Water1 1/2 litres
Chunky Peanut Butter1/4 cup
Soy Sauce1/8 cup
Chinese Rice Wine1 tblsp
Ginger1 tsp, minced
Tofu50 gms, firm, diced, lightly roasted
Spring Onions2, trimmed, chopped
Red Capsicum1/4 cup, diced, roasted
Water Chestnuts1/4 cup, slivered
Coriander Leaves1 tblsp, chopped

Method


  • Pour 3/4ths of the water into a large pan. Bring it to a boil over moderate flame.
  • Cook the noodles till it is al dente, about 4 to 5 minutes. Drain and refresh under cold running water.
  • Combine the peanut butter, soy sauce, rice wine, 1 tblsp water and minced ginger. Whisk well.
  • Add the cooked noodles, tofu, spring onions, capsicum, chestnuts and coriander leaves.
  • Toss to mix well.Serve warm.
