Ingredients

Bhindi/Okra25
Amaranth flour3 tbsp
Rock salt1 1/2 tsp (or as per taste)
Amchoor powder/Mango powder1 tsp
Black pepper1/4 tsp
Oil (to fry)1 1/2 cup
For the salad
Tomato, deseeded and chopped1/3 cup
Cucumber, chopped1/3 cup
Sweet corn, boiled1/3 cup
Chopped coriander2 tbsp
Lime juice1/2 tsp
Green chillies, chopped1
Rock salt1/2 tsp

Method


  • Slice the bhindi using a mandolin/slider in an oblong fashion.
  • In a mixing bowl, add in flour, salt, amchoor powder, black pepper and mix well.
  • Add the bhindi to the flour mix and coat the bhindi well in the flour mix.
  • Fry in medium-high flame until golden, take out on kitchen towels.
  • For the salad,Mix all ingredients in a bowl. Add the crispy fried bhindi and serve!
