Method
- Halve the apricots, remove seeds and place the hollow side facing skywards on a platter
- In a small bowl, mix together the goat cheese and almonds
- Using a knife, cut off the bottoms of the coconut macaroons
- Place a generous dollop of the goat cheese mixture on each apricot half
- Crown goat cheese mounds with the top portions of the macaroons
- Dot the blueberries with a small amount of goat cheese, then gingerly place atop the point of each macaroon.Serve immediately.
