Method


  • Halve the apricots, remove seeds and place the hollow side facing skywards on a platter
  • In a small bowl, mix together the goat cheese and almonds
  • Using a knife, cut off the bottoms of the coconut macaroons
  • Place a generous dollop of the goat cheese mixture on each apricot half
  • Crown goat cheese mounds with the top portions of the macaroons
  • Dot the blueberries with a small amount of goat cheese, then gingerly place atop the point of each macaroon.Serve immediately.
