bread | 1 Panini |
pesto sauce | 2 tbsp |
lettuce leaves of your choice | 5-6 pieces |
feta cheese, crumbled | 20 gm |

Method
- Coat red peppers with olive oil and salt and roast in oven at 160 degree Celsius till the skin is charred. Once cool, peel off the skin.
- Slice zucchini and grill with olive oil and salt.
- Clean and slice mushrooms and grill with olive oil and salt.
- Slice Panini bread into two lengthwise and spread 1 tbsp of pesto on each side.
- Layer one side with lettuce leaves, zucchini, red peppers and mushrooms, and top with crumbled feta and close with other half. Grill for 3-4 minutes and serve.
