Ingredients

feta cheese, crumbled20 gm

Method


  • Coat red peppers with olive oil and salt and roast in oven at 160 degree Celsius till the skin is charred. Once cool, peel off the skin.
  • Slice zucchini and grill with olive oil and salt.
  • Clean and slice mushrooms and grill with olive oil and salt.
  • Slice Panini bread into two lengthwise and spread 1 tbsp of pesto on each side.
  • Layer one side with lettuce leaves, zucchini, red peppers and mushrooms, and top with crumbled feta and close with other half. Grill for 3-4 minutes and serve.
