- Pressure cook the kabuli chana along with 3 Cups of water for 5 whistles or till the chana are cooked but not mashed. Drain preserving the water and keep aside. Do 1/4th chana to a smooth paste for gravy.
- Heat oil in a kadhai add cumin seeds and asafoetida. When the seeds crackle, add the chillies and curry leaves and saute for 10 seconds. Blend onions and tomatoes into a fine paste,add the paste and for 2 minutes.
- Add the prepared paste, mix well and cook till oil separates. Add all dry masalas, 1 cup preserved chana water,salt, mix well and bring to boil.
- Add the channa, mix well.
- Simmer the flame and cook till oil loosen to the edges of the pan. Add the coriander leaves and switch of the flame.
