Preservatives - Jam - Raw Mango Jam

  1. Peel raw Mangoes. (Mangoes should be big in size) Then cut into cubes neatly. Now shift it in a heavy bottom vessel. Pour a cup of water in cooker and put 3 whistles.
  2. Once the pressure is down,drain water and then blend/mash it into a fine paste.
  3. In a thick bottomned pan add the pulp and sugar.Quantity of sugar depends upon the sourness of a mango. Put the flame in medium. Keep it stirring till this syrup gets thicker (one string consistancy). Then add the acid crystal,switch off the flame and mix well.
  1. It can be stored for a year in the fridge.
