Method
Blend mango pieces coarsly into blender. Transfer it to seperate bowl. Even grating is fine.
In blender , add green chillies, coriander leaves, coconut, salt and grind coarsely without water.
In the skillet add oil to heat. When the oil is hot, add mustered seeds, cumin Seeds, broken red chillies,curry leaves and asafotida one by one. Let it roast well. Add cashew nuts and roast till it changes the color.
Add the chopped potatoes and close the lid to cook for 5 mins or till they becomes soft.
Add mango paste and cook for 3 mins or till the raw smell comes down.
Add another paste with turmeric and cook for 3 more mins on medium heat.
Mix the above mixture with cooked rice.
Recipe Tips
- Dont over cook the rice.
- Once the rice becomes cool, only then add the mixture.
